Just out of curiosity I am asking this Q...

Can you define art like you can science?

One definition of art given by a famous artist here in India: "Art is something that communicates the personal views of the artist about the world around him".

Other ones:

"Art is something that makes us more thoughtful and well-rounded humans".

"Art is something that is both functional and (hopefully) aesthetically pleasing to our eyes."

"Art is in a constant state of change, so nobody can really pin down what it is."

"Art is subjective, and means something different to every single person on earth."

"Art is form and content."

Art is a diverse range of human activities and the products of those activities

The expression or application of human creative skill and imagination, typically in a visual form such as painting or sculpture, producing works to be appreciated primarily for their beauty or emotional power.

"Art is everything and everything is art".

There are several others too.

Why do the statements artists make almost always start with the words, "For me art is... " I never heard a scientist say, " For me science is..." because there can only be a single definition for science and which is not based on personal experiences and resultant opinions like in art.
Isn't there an agreement on this in the art world?

Art world itself is in a dilemma! Scientists get cues from the art world to learn about art. With so many definitions, we really are in a perplexed state why this is so!

My view: For me, a real art work should convey a message something conceived specially and uniquely by the person who perceives things differently from others around him/her. An art work should make your grey matter work hard. It should show things in a new light, conveying deep and inner thoughts of the creator. That is real creativity.

What is your definition of art ?

I feel that art is anything we do in which function is not the only purpose!
