Q: Aren't scientists supposed to be very open minded? So Why do they refuse to consider certain things?

IF you keep your mind wide open , people will try to dump all sorts of rubbish into it.
It perfectly captures the idea that without healthy boundaries or critical thinking, simply accepting every idea, opinion, or piece of information that comes your way can quickly lead to mental clutter. A healthy mind requires both the receptiveness to learn new things and the discernment to filter out what isn't useful or constructive. It is a great reminder to be intentional about what you allow to influence your thoughts.

While staying open-minded helps us grow, having strong boundaries prevents us from being overwhelmed by other people's silly opinions.
This is a fact.
I was asked to be open minded to accept astrology.
I was asked to be open minded to understand black magic.
I was very open minded about several religions until I was asked to "convert".
So I decided to add filters to my mind. 

If I am discussing science, I deal with only evidence based facts. Opinions don’t count in science.

You can challenge science but using only scientific methods. The problem is not that science is being challenged, it is what it is being challenged with. And of course how it is challenged. Never use your beliefs and irrational thoughts to challenge scientists. If the challenge only permits to help people understand, analyze, critique and review in an objective manner the scientific strengths and scientific weaknesses of existing scientific theories covered in the course being taught and to encourage them to respond appropriately and respectfully to differences of opinion about controversial issues which include evolution, global warming, etc., so as to develop critical thinking skills, science embraces such a healthy debate. Science should be challenged only by scientific means and in a scientific way. If everybody tries to propagate his or her irrational theory by challenging science, there will be utter chaos.

The problem with “I’m entitled to my opinion” is that, all too often, it’s used to shelter disastrous beliefs that should have been abandoned long back. It becomes shorthand for “I can say or think whatever I like” – and by extension, continuing to argue is somehow disrespectful. And this attitude feeds, into the false equivalence between experts and non-experts that is an increasingly pernicious feature of our public discourse. Perhaps that’s one reason why enthusiastic amateurs think they’re entitled to disagree with climate scientists and immunologists and have their views “respected.” And do you respect ignorance, misconceptions and superstitions in the same way as facts based on evidence and true knowledge? NO! There is evidence based on a scientists' years of toil, thorough analysis and testing and there is rubbish based on wild imaginations, misconceptions and perceptions and it’s not appropriate to give the latter equal time and space with serious expertise.

Someone who objects to scientific facts on non-scientific grounds simply cannot form part of the debate. There is the data and what it means. And there are facts whether anybody agrees with them or not.

If scientists are too open-minded... two things will happen: 1. Their brains will fall out  2. People will try to throw all sorts of rubbish into it.

While open-mindedness is generally a virtue, being too open-minded , without healthy boundaries or foundational convictions, you risk adopting harmful ideas and losing your critical discernment. 
 Why excessive open-mindedness can backfire:
Loss of Core Values: Constantly entertaining every perspective can make it difficult to develop and maintain your own moral compass, leading to a weak sense of identity. 
Vulnerability to Manipulation: When you are willing to accept every idea without question, you become an easy target for misinformation, grifters, or toxic relationships. 
Decision Paralysis: Willingness to consider too many alternatives can result in overthinking, making it impossible to confidently settle on conclusions or take action. 
Psychological Exhaustion: Processing multiple conflicting truths is mentally taxing. It is okay to a certain extent but research suggests that constantly questioning core convictions can actually increase existential anxiety and lower a sense of purpose. 
Lack of Boundaries: Being overly accommodating to every behaviour or belief can lead to an erosion of personal boundaries, which can cause resentment in personal relationships. 
As the saying goes, you want to keep an open mind, but not so open that your brain falls out. The key is practicing intellectual humility—being willing to learn while still holding steadfast to your core values.
Once you think critically about something and come to a firm conclusion, unless somebody provides data and genuine evidence against it using scientific methods, it is better to always stick with it. 
My mind is partially open, not wide open. That keeps my sanity intact. 
And no complaints, please!
