Q: How do people of science who don't believe in super-naturals explain difficult things like death?

DeathEvery creature that comes into life has to face this reality in the end.
It has both fascinated and created fear in all human beings since the first man walked on the planet called Earth. Finding someone who you interacted with very closely all your life became an inanimate matter all of a sudden and stopping that interplay abruptly becomes a frightening reality and makes your emotional mind go haywire. In ancient times people wove stories around it to explain things. 
When they could not understand things surrounding it clearly, people invoked unknown entities like supernaturals and put everything in their closed fists. 'Divine pastimes' they called them. People still resort to this imagination when they find very young leaving this world abruptly. 
But as a person of science, nothing surprises me anymore. 

Death is the result of a very fundamental physical role which governs the entire universe, and that is entropy.

Entropy is a concept from physics and thermodynamics that quantifies the degree of disorder or randomness in a system.

The laws of thermodynamics dictate that entropy tends to increase over time. What is suggested by this is that any system naturally moves towards a state of disorder, leading to the eventual but inevitable breakdown of organised structure.

Living organisms, including humans, are no exception to this rule.

In death, the collection of atoms of which you are composed  are repurposed.

And we have more explanations.

Sudden deaths? We have answers. We know how biological systems work and what can go  wrong and put an end to that system.
A heart beats only if it has the right conditions and sustainable bio-chemical reactions and electric pulses. A doctor's duty is just to see that these correct conditions are maintained. He will do everything that his knowledge in this regard tells him to do. But if things don't fit exactly into the rules of Science, the heart must stop working. Nothing can change it. 
 
A living body, whether young or old, that has all the wrong working conditions cannot sustain for long. It has to cease to exist unless intervention takes place following scientific rules. Medical practitioners and their scientific training will have the role to do it in the way it should be done. Still if things don't fall in exact places, a body following biological rules, will stick to its predetermined course.
We know what happens at each stage during this whole process, sometimes even at molecular,  atomic and particle levels.

Accidental deaths? We have explanations. These happen when probability becomes reality. What is that?
 Probability becomes a reality when an abstract potential outcome (a statistical possibility) is selected, materialized, or observed, resulting in a single, concrete event, often driven by the "collapsing" of potentiality in quantum mechanics or simply the conclusion of a random process . This transformation is frequently interpreted as the moment information becomes definitive, moving from a range of possibilities to a single point in time and space.
When several factors decide outcomes, they follow the interplay of scientific rules and routes and exactly fit into the reaction realities.

Each plane that was trying to land here had to face several negative forces. People at the controls  try to avoid them.  When the interplay leads to a positive outcome, you will survive. If it doesn't you will perish in an accident. 
How a person survives a health condition or a catastrophe or a bad situation depends on the sum total outcomes of scientific factors occurring simultaneously.
No supernatural miracles involved, just factors governing the outcomes.
And human beings with the help of machines are trying to control them using their knowledge based on scientific studies and life-time experiences.
It is easy to interpret things clearly after the situational play is over to tell why someone perished or survived with the data analysis. Before or during the play out one can only try to manage things. 
When you can see all this before your eyes very clearly, nothing seems to me like a supernatural pastime or a miracle. They look like an interplay of scientific factors and their reality outcomes. 
Nothing surprises or puzzles me anymore.
That is why we study everything around us clearly, systematically and authentically to have a full view  to try to bring things fully under our comprehension and control.
